"Über drei Jahre lang hatte der Most, der ursprünglich einen natürlichen Zuckergehalt von 520g/l hatte, im Fass gegoren. Das brachte pro Jahr eine Ausbeute von ca. 1,5% Vol. Alkohol. Zum Ende waren es ganze 4,72% Vol. bei einem Totalextrakt von 530 g/l, 435 g/l RZ und einer Säure von ca. 12,5 g/l. Helles, aber glühendes Bernstein. Zeigt schon beim Einschenken eine dicke, ölige Konsistenz. Fliesst träge ins Glas. Was für ein Wein! Duftet nach frischem Gebäck, noch ein deutlicher Hefeton, Quitte, Aprikose, geröstete Apfelschale. Zeigt eine unglaubliche Säure, die die Süsse völlig neutralisiert, Lebertranaroma am Gaumen, viel konzentrierte Aprikosenmarmelade. Ein langer Abgang, der nicht enden will."

PAJZOS ...
... refers to a vineyard in Bodrogolaszi. The Pajzos winery cultivates around 70 hectares there. Most likely, the Pajzos vineyard is related to the wedding of Anna Pajzos of Sáros to a member of the Dókus family in 1899. They have been prominent vineyards owners in Hegyalja since the 17th century. Pajzos might have been created partly from the Dókus estates.
